It seems like you are a very healthy eater. Why do you think eating healthy is so important?

Working in healthcare for over five years has really opened my eyes to how important our health is. If you think about it, none of the small details in life really matter if you and your family aren’t healthy, so I try to make it my number one priority.

That said, happiness is also a huge part of our health so if it makes you happy to eat dessert or have french fries on occasion, then I believe in allowing yourself that much. I try to eat healthy and exercise most of the time so that I can still enjoy the unhealthy things in moderation.

What are your favorite plant-based recipes? Which ones have been most popular on your site?

I really enjoy my  Grilled Portobella Mushrooms as a substitute for meat. They are so juicy and delicious, you’ll forget all about steak!

My Detox Kale Salad with Lemon Apple Vinaigrette has been really popular and I love how simple and healthy it is.

You’ve posted a ton of fantastic gluten-free recipes! What inspired you to create gluten-free recipes?

Even though I don’t eat meat, I still like to keep a variety of foods in my diet so that I am getting a good balance of different nutrients. Many of the gluten-free flours and grains are super healthy so I try to create recipes based around them for that reason. I am not allergic to gluten myself, but I can sympathize with the challenges that come with it so it makes me happy to try an offer a few alternatives for those that are allergic to gluten.

What are your best gluten-free recipes? Do you have any favorites?

A really popular one on my blog is my Mediterranean Quinoa Casserole. It is light, loaded with healthy ingredients, and makes for great leftovers. I’ve referred back to that recipe many of times and I love it.

I also love Mama’s Stuffed Veggie Loaf. The cheese in the middle is a nice surprise and it freezes well to have on hand for meals during busy weeknights.

My most popular gluten-free dessert would have to be my Chocolate Chip Yogurt Donuts.

I try not to use any starches or gums when I bake gluten-free so it can be quite challenging at times, but these are made with healthy flours that make me feel slightly better about eating all of that chocolate. Plus, they’re dense enough that half of one is enough to satisfy my sweet tooth.

First of all, thank you so much for featuring me! Making Thyme for Health is a food, travel, and lifestyle blog where I like to share mostly plant-based recipes and bits of my life in Northern California.

I gave up eating meat almost nine years ago and it really forced me to get in the kitchen and find creative ways to make whole meals that taste good. I am newly engaged and my only child is a really hairy one with a tail, but I work full-time in healthcare and can relate to having a busy schedule that doesn’t allow a lot of time in the kitchen. I try to focus my blog around recipes that are quick, yet healthy so that I will have something to refer back to when I {hopefully} am blessed with my own family one day soon.
