When Anjali started cooking for her husband, she found herself trying to make healthier recipes that still tasted delicious. She talks about healthy eating and gives us advice to staying healthy. Check out her best recipe creations that are nutritious and yummy! 

What is your food philosophy?

When people think of being a “picky eater,” they think of the little kid who doesn’t want to eat anything except ice cream for breakfast, lunch, and dinner. But I define the picky eater philosophy as being something very different. Being a “Picky Eater” is about being mindful of what you put into your body and consuming processed foods in moderation. Eating healthy is usually associated with tasteless food, but to me, Picky Eating is healthy eating that’s delicious, easy to make, and satisfying.

What has inspired you to eat healthy? What advice can you give to others who are trying to be healthy?

I was lucky enough to be raised with parents who had a lot of knowledge about healthy food, so it was just a “way of life” for me from an early age. That being said, I’m inspired to continue to eat healthy because of the way it makes me feel. I’ve noticed that when I end up eating a lot more of the “junky” processed foods that I have less energy and I feel more run down than when I’m eating healthier. So it definitely gives me motivation to eat healthy most of the time!

In term of advice, the biggest piece of advice I can give is to start small, focus on small changes you can permanently integrate into your life (for example, making some simple healthy changes like whole grains for refined grains, using less oil/butter/cheese in your recipes, or adding in more veggies to your meals). Don’t completely deprive yourself and cut out everything at once. And if you do end up indulging, try not to feel guilty or be too hard on yourself! No one is perfect 100% of the time. I try to follow an 80/20 rule – eat healthy 80% of the time, and leave 20% of your food to minor indulgences – like that piece of chocolate at the end of a meal.

There are so many delicious recipes on your site! What are your go-to recipes when you want a healthy snack?

My healthy snacks are super simple, no-cook recipes that I can take with me when I’m on-the-go. Right now I’m really into fresh fruit (berries and apples are my favorites) mixed in 0% Greek Yogurt with a drizzle of honey. Carrot / celery sticks and hummus are a close second! And you can’t really go wrong with fresh fruit in general – apples are great because they don’t perish quickly and are pretty durable too. Here is a list of my 20 favorite healthy snacks that are easy to make and transport, and are family-friendly!

Which healthy recipes do you recommend for kids?

I like recommending recipes for kids that are easy to eat, that don’t have too many strong/pungent flavors, but are still super healthy!

For breakfast, I love my Strawberry Shortcake Oatmeal or my Chocolate Brownie Oatmeal. Both are incredibly nutritious but you would never know it, especially since they sound and taste like dessert!



If you want to try to sneak more greens into your child’s diet, this Green Smoothie might just do the trick. You can’t taste the kale at all!


And for lunch or dinner, I like creating recipes that gets kids involved in the kitchen. With these Homemade Whole Wheat Pita Pizzas, kids can create their own and choose their toppings! Same goes for this Veggie Chili – you can make a healthy toppings bar and everyone can pick what they like. Lastly, if you’re looking for a twist on the traditional sandwich, try these Southwestern Veggie Burgers or Falafel Pita Pockets. I hope you enjoy them!

AnjaliHere’s a little bit about my story: I grew up a “whole wheat” girl, but I married a “white bread” kind of guy. I was raised in the healthy-eating, organic-obsessed, farmer’s market-driven culture of the San Francisco Bay Area; he grew up in the deep-dish pizza-loving suburbs of Chicago. My childhood was filled with fruits, vegetables, and home cooked meals–I was raised to be “picky” about what I put into my body and to eat junk food in moderation. For him, ice cream and french fries were a way of life. When most people get married, they worry about things like money or in-laws. But when we got married, the question was: What would the picky eater and her fast food husband eat for dinner? I realized that the only way I would be able to bridge the gap between my husband’s “white bread” world and my “wheat bread” world would be to cook healthy versions of foods that my husband enjoyed. And so, at the age of 24, I taught myself to cook.

Gradually, I started making healthier swaps in my husband’s diet, “sneaking” in the good stuff without him noticing. Slowly but surely he began to identify different flavors like cumin, ginger, and garlic, and he even started asking for vegetables in his dishes!  He said it was because he learned that healthy food could taste good, which meant the world to me.

My husband has been a great “guinea pig” for testing out my recipes – and between his picky palate and my picky food preferences, I can pretty much guarantee that all of the recipes you will find on my blog are delicious!

My blog was inspired by my husband’s transformation from a “white bread eating,” fast-food-loving” guy to one that actually eats healthy food now. But my blog was also inspired by my own transformation: from a girl who grew up in a health-conscious household, to the college student that indulged and “fell off the wagon”, to the new graduate that learned to be “picky” about what she put into her body, to the wife that learned to cook and used her “picky eater” philosophy to help her husband eat healthier.
