Tell us more about yourself, your site, and your family.

I am a southern girl raised in South Carolina and currently live in the Atlanta, GA area with my husband and two children.  I am a Crossfit trainer, author, foodie, and devoted mom and wife.  I love to find new ways to make all of my favorite family recipes more nutritious.  I am really passionate about helping other people make better food choices and encouraging them to embrace a healthy and fit lifestyle.   When you discover that healthy cooking can taste great and even please your kid's palates, then lifestyle and habit changes aren't so difficult.  I enjoy creating my own twist on traditional family recipes, utilizing local, whole foods, and minimally processed ingredients.  I feel it’s very important to get clean, healthy meals on the table that the entire family will enjoy.  The key is to keep things as simple as possible.  Healthy food doesn’t have to be fancy; it just needs to taste good!  I know a lot of moms struggle with finding time to cook nutritious meals with hectic schedules.  I hope to be able to help provide fresh ideas, health and wellness tips, and delicious recipes to make their lives a bit easier.

You recently wrote a book, A Cup of Tea for Tiger and Me.  What should moms expect from reading it?

This story is based on my daughter’s daily ritual of having “tea” with our kitty, Tiger.   It all started when Lauren was three-years-old and we adopted Tiger, a very affectionate orange and white polydactyl kitten.  One day Tiger decided to join her tea party.  He jumped onto a chair and Lauren served him a cup of “tea”.  He continues to honor this tradition, coming to her room daily and sitting in his special “tea time” chair.  I love the precious connection that children have with their pets and wanted to write a story based on this human-animal bond.   “A Cup of Tea for Tiger and Me” is a whimsical picture book geared towards little readers up to 8-years-old.  In the story, you will find a lesson of love and forgiveness in a rhyming tale to entertain and delight young readers.  It’s a great story for the animal lover in all of us! In your blog, you focus a lot on healthy eating.  Why is healthy eating so important to you and your family?

It’s important to be mindful of what we are putting into our bodies.  If we take care of ourselves by eating nutritious real food and removing sugar and processed foods from our diets, then we can live more energetic, fuller, and healthier lives.  I stress the importance of eating lots of fruits and vegetables, lean protein, nuts & seeds and healthy fats to my children. I want them to grow up with good food habits.  I try not to make too many things “taboo” because that makes them more desirable, but instead stress moderation and give them the guidelines they need to make the right food decisions.  An occasional splurge isn’t going to sabotage your diet, on the contrary, I feel that it’s necessary to stay sane and on track!

What ingredients or foods do you cook with the most often?

I love organic chicken.  It’s readily available, simple and versatile to prepare, and budget friendly.  You will find a lot of chicken dishes on my site.  Other staple items that I keep in my pantry are coconut sugar and raw, local honey.  They are great natural sweeteners to use in my recipes.  I also cannot do without unrefined organic coconut oil!  I buy it in bulk and use it as one of my primary sources of healthy fats.  Other staples that I always have on hand are cage-free eggs, grassfed butter, lean meats, lots of fresh fruits and vegetables, and almond milk.

What are your best go-to recipes?

Our favorite family recipes that I make often are Zucchini Spaghetti (the kids love this one…sneaky veggies!), Creamy Prosciutto Mushroom Chicken (a delicious and simple crock-pot favorite & one of my most “pinned” recipes on Pinterest), Stuffed Bell Peppers (because we love them!), Baked Cinnamon Apples (great for satisfying a sweet tooth and kids love them, too), Paleo Cinnamon Crunch “Granola” (a delicious grain-free cereal or snack), Peanut Butter Banana Smoothie (my son’s favorite breakfast), No Bake Energy Bites (a great power snack for kids)  and our favorite Almond Butter Dark Chocolate Chip Cookies.

Do you have any “Food Rules”?

I feel that it’s important to teach our children to take care of the inside of their bodies, as well as the outside.  I encourage my kids to try everything on their plate.  I don’t give them options for their meals.  Becoming a short-order cook for your kids sets you up for a lot of extra work and raising children with picky palates!  Exposing your kids to a variety of healthy foods while they are young will help guide responsible food choices in the future.
