I am a Registered Pediatric-Neonatal R.N. and Sign Language Interpreter for the Deaf. I’ve been married to Hubby the Hubster for 29 years and have two beautiful grown daughters! I’m Blessed to have the love of my life, My Little Grandbaby live with us! Leslie Loves Veggies is a fun, drama-free place where my Readers can come, relax enter giveaways, which is nice. It’s a place to try before you buy kind of place!
What inspired you to start the blog, Leslie Loves Veggies?
I was entering giveaways and winning like a banshee and thought “I could do this!” And I did! I learned the ropes from the best Bloggers out there. I took my time and when I was ready I started Leslie Loves Veggies.
Have you always liked veggies? Which ones are your favorites?
I have always loved veggies. My mom said at the age of two I was asking for more salad. The only veggies I don’t like are okra and lima beans. My favorites? I love red peppers, asparagus, Brussels sprouts and spaghetti squash a lot!
Do you have any tricks to help make your vegetables taste especially flavorful?
Spice those suckers up! My motto is “We like our food highly seasoned!” I don’t add lots of fat but I do like seasoning. Not too heavy on the salt but a little heat sure adds zing. Spices and seasonings are your best friend. Don’t be afraid to experiment with in with your spices folks!
What advice can you give mothers to getting their children to eat more vegetables?
Don’t overcook ‘em! And serve them with a healthy dipping sauce. Kids love to dip. And if your kids don’t love a certain veggie today, try it cooked another way next week. Chances are highly likely your kids will like a vegetable cooked one way. And bring your kids with you to the store when you’re buying produce. Let them choose bright, fresh produce in season! What catches their eye will probably appeal to their tummy!

Which recipes on your site would you recommend for moms?
It’s not a vegetable recipe, but it’s my favorite on my blog, it’s my mom’s Mandel Bread recipe! The Grandkids loved it! Mmm! My Present to you…MY MOM’s Mandel Bread
What are your favorite books, TV shows, movies, or magazines that help you relax after a long day?
To be honest, I don’t have time to read much for pleasure anymore which is sad because I love to read. I don’t watch TV but at the end of the day I like to have a big cup of tea, take a walk with Hubby the Hubster and when I can soak in a hot bath tub!
What are your family’s plans tonight for Halloween? What are you most looking forward to?
It’s funny, all my life I didn’t like Halloween. Now I do look forward to it because I love to see the little ones dressed up in their costumes, they are so darned cute! That’s what I look forward to! The ghoulish stuff kinda creeps me out!
What Halloween recipes can you recommend to moms?
We usually splurge (like most people I know) and order pizza on Halloween! But I do like to make spaghetti squash the day before Halloween! Just slice in half, scoop out the seeds and roast until tender. Let cool and then take a fork and run inside the squash, which will yield strands similar to spaghetti. I serve this with a very spicy homemade marinara. It’s wickedly delish! Enjoy!
