Tell us more about yourself and why you decided to start your blog.  How did you come up with the name, Mango & Tomato?

I grew up in a family where everyone cooked. From a young age, I helped out in the kitchen and absolutely loved it. Once I moved out on my own, cooking became not just a necessity, but also a creative outlet. I love sharing anything I like with my family and friends, but since most of them live far away, I thought putting my recipes and photographs on a blog would be a great way to stay in touch.

When coming up with a name, I wanted something cute, easy to remember and that reflected some of the things I liked most: Mango & Tomato!

Your blog is filled with a ton of incredible recipes.  How do you come up with them?  Where do you get the inspiration to make so many tasty dishes?

I get my inspiration for the recipes that end up on my blog from so many places. They can be inspired by a childhood memory, something I’ve tried at a restaurant, saw on Pinterest, or an item that is on sale at a grocery store or is in season at the farmers market.

What recipes are your favorites?  Which ones are you the most proud of?

One of my favorite recipes, which I actually make at least once a year, is the Russian Potato Salad. Not only is it incredibly delicious, but it brings back many happy childhood memories.

The recipe I’m most proud of is Marinated Lamb with Crispy Polenta Cakes, Roasted Tomatoes & Yogurt Dip. It includes some of my favorite things: polenta and tomatoes, but pairs them in a new way with lamb. The presentation is quite striking, but can also be adjusted for a casual family dinner.

What are a few ingredients that you think all moms should keep in their house?

Eggs, garlic, olive oil, canned tomatoes and beans, pasta, good canned tuna, a variety of condiments and pickled vegetables and onions. The most valuable thing to have, however, is creativity and the willingness to experiment in the kitchen.

What kitchen products could you not live without?  Which products do you think moms should definitely have in the kitchen?  Where can they find these products? 

I can’t be without a chef’s knife and a great cutting board. Those are the tools I use daily. But then I also like little kitchen gadgets such as a reliable can opener, adorable measuring spoons and a variety of pretty dishes for my photos. Moms should have enough products in the kitchen that they feel that those products get used without getting in the way.

What are 5 tips that you can give moms when cooking in the kitchen?

  1. Don’t overthink it. Keep it simple!
  2. Invite your kids to help you out with whatever kitchen tasks are appropriate for their age.
  3. Leftovers are your friends. You can always spruce them up to make them more excited.
  4. Clean as you go {that’s what everyone says, right? I need to listen to my own advice.}
  5. Don’t be a short order cook: kids will learn to eat what you eat!
