Katie from Yes, I Want Cake on Creating Recipes

Katie started her food blog back in 2009 and it has only flourished with healthy recipes since. She discusses her favorite recipe to eat, her favorite recipe to cook, and how she creates her own recipes.

Tell us more about yourself, your family, and your site. When did you first start your site, Yes, I Want Cake, and what motivated you to start your site?

I started Yes, I want cake in June 2009 after being glued to my computer for a week (or two) following my discovery of food blogs. I couldn’t stop reading! I remember talking to my mom about my new-found obsession and she said: you could totally do that! I was a 3rd grade teacher at the time, so I had less time (and energy) to spend on my blog than I do now, but I incorporated my students and their hilarity into my daily ramblings – and I think that drew people in.  Much like my one year old daughter does now – the internet loves cute, spunky, kiddos. Now that I am a full-time mama, I blog during naptime and sometimes at night – but my daughter loves to be in the kitchen with me when I’m recipe creating and testing. She’s only one – but she is already a serious foodie. My husband also loves to help with that recipe testing…he’s a good eater too!

My site has changed a lot since the beginning. I used to treat it more like a food and exercise journal than a fun resource for healthy(ish) recipes – which is what I primarily do these days. I also didn’t have any clue what to do to make food look appetizing in pictures, so if you ever go into my archives, be prepared for some really heinous looking shots. (I’m still not an expert in that field, but I’m learning)

Where do you normally find your recipes? Do you often create your own recipes? What recipes have you created?

I create my own! I usually find inspiration or ideas through magazines (Bon Appetit and Southern Living and a Farmer’s Market circular are my favorites).  My garden also has a major impact on my cooking in the summer – I get to use what’s growing in the backyard!

You can find my recipes here.

What is your favorite recipe to make, and what is your favorite recipe to eat?

I make fried chicken, mashed potatoes and green beans ONE TIME A YEAR on my husband’s birthday. We don’t eat like that very often, but because it’s so rare, and because I know my husband loves it – it’s my favorite thing to make.

But on a daily basis, we like to eat fresh foods and loads of vegetables. I eat some variation of roasted/grilled vegetables + grains almost every night. You can’t go wrong with that combo.

When you are in a hurry to get some dinner on the table, do you have a quick go-to recipe?

Recently, I’ve been loving the grill or the one-skillet suppers.  My latest favorite includes zucchinis and tomatoes from my own backyard – you can find the recipe it here.

Do you have a motto or saying that you and your family live by?

His love never fails, it never gives up, it never runs out on you. – which is actually a lyric from a song we frequently sing at church. Our faith has gotten us through some tough times that we’ve recently faced.

What are your top 5 tips for all moms?

  • Enjoy your life – do whatever it takes to make that a reality
  • Laugh at yourself
  • Sleep is overrated
  • Find something YOU love to do and stay in passionate pursuit of it
  • Embrace the Mess
